Material:
• Boiled Potatoes – 2 medium sized
• Water chestnut flour – 1 cup
• Rock salt – as per taste
• Green chili – 1 finely chopped
• Ginger – 1/2 tsp (grated)
• Green coriander – 1 tablespoon (chopped)
• Cumin – 1/2 tsp
• Black Pepper – 1/4 tsp
• Water – as required
• Ghee or peanut oil – to fry

1. Peel the boiled potatoes and mash it well.
2. Take water chestnut flour in a bowl, add mashed potatoes to it.
3. Now add green chillies, ginger, coriander, rock salt, black pepper and cumin and mix well.
4. Prepare the batter with some water. Keep in mind that the solution is not too thin nor too thick.
5. Heat ghee or oil in the pan.
6. Pour the prepared mixture in small parts by hand or spoon in oil and fry until it becomes golden.
7. Remove the paper on the towel so that the excess oil comes out.
Method of serving: Now serve these prepared potato pakoras of water chestnut flour with green chutney or curd with green chutney or curd.
