How to make brinjal filling?

  • First step: First take a large size brinjal. Wash the brinjal and then wipe and apply some oil on it. Apply some deep cuts in the brinjal with a knife and put 2-3 garlic buds and a green chili in these cuts. This will taste inside the brinjal. Now fry the brinjal on low heat. Fry it from all sides. When the brinjal is roasted, remove it from the gas and when it cools down, take off the peel and mash it well.

  • Second step: Heat some mustard oil in a pan. Fry it with cumin seeds and then add finely chopped onion and ginger-garlic paste and fry till it becomes golden. Next, add tomatoes and fry until melting. Now add turmeric, red chili powder, coriander powder and mix well. Now add mashed eggplants to this spice. Mix it well and then add salt to taste.

  • Third step: Now, heat a small coal on gas. After that place a small bowl in the middle of the pan of the brinjal Bharta. Put the hot coal in that bowl and add a spoonful of ghee to it. As soon as the smoke comes out, immediately cover the pan with a plate. Leave it covered for 2-3 minutes so that the fragrance of the smoke is settled in the whole. Now remove the lid and take out the coal bowl. Garnish with green coriander on top. Serve hot and enjoy it
