Veg Kolhapuri Recipe: Eating the same food every day is enough to bore anyone. In such a situation, one feels like trying something new regarding food. If you are also thinking of making something new then you can try ‘Veg Kolhapuri’. The taste of this dish prepared in Marathi kitchen will make you crazy.

It is usually made by mixing slightly spicy and pungent spices. You can eat it with roti, puri, paratha or rice. This is the easiest and simplest way to make this dish at home.

Ingredients to make Veg Kolhapuri

➣Potato- 2
➣Carrot- 2
➣Capsicum- 2
➣Beans- left
➣Tomatoes- 2 or 3
➣Cauliflower- 2 cups
➣Peas- half cup
➣Ginger- 1 inch piece
➣Green Coriander- 3-4 spoons
➣Cream- half cup
Asafoetida- 1 teaspoon
➣Cumin- 1 tsp
➣Red chilli whole – 2-3
➣Sesame seeds – 2 tbsp
➣Salt- as per taste
➣Turmeric powder- half teaspoon
➣Coriander powder- 2 teaspoons
➣Red chilli powder – 1 tsp
➣Garam masala- half teaspoon
➣ Grated dry coconut – 1/3 cup
➣Oil for frying vegetables – as per requirement

How to make Veg Kolhapuri

➣To make Veg Kolhapuri at home, first take a pan. Now add coconut, dry Kashmiri red chilli, poppy seeds, sesame seeds, cloves, black pepper, cinnamon, black cardamom seeds and fry.

➣ After this, take them out in a plate and keep them. When they cool down, put them in a mixer and grind them well. On the other hand, cut all the vegetables like beans, carrots, potatoes lengthwise.

➣After this, take peas and cabbage and boil it by adding some salt in water. When it is 80 percent cooked, turn off the gas and keep it aside.

➣ Now heat 2 tbsp oil in a pan on low flame. Add fennel in it and fry for 15-20 seconds. Add chopped onion to it and cook until it turns light pink.

➣Once the onion is roasted, add garlic-ginger paste to it and now add capsicum to it,

➣Cook it a little and then add tomatoes and sprinkle water on top. Cook it a little and when the tomatoes melt, add the prepared masala to it.

➣Now add pre-boiled vegetables to the prepared mixture. Now keep stirring it with the help of a spoon. Now add 1/3 cup milk and equal amount of water.

➣When the gravy of Veg Kolhapuri starts thickening, turn off the gas and add cream and mix it again.

➣Garnish with coriander on top. Now you can serve prepared Veg Kolhapuri with roti-naan or rice.
