To make Kulcha, very important things are required which include flour – 2 cups, baking powder – half teaspoon, baking soda – one fourth teaspoon, milk – half cup, curd – 1 tablespoon, oil – as required, salt – half teaspoon. , Sugar- 1 teaspoon, Grated cheese- 200 grams, Finely chopped ginger- 1 teaspoon, Finely chopped tomato- 1/4 cup, Finely chopped onion- 1/2 cup, Finely chopped capsicum- 1/4 cup, finely chopped green chillies – 2, mustard seeds – 1 teaspoon, cumin – 1 teaspoon, rice bran oil – 1 tablespoon, ground black pepper – 1/2 teaspoon, tomato ketchup – 2 tablespoons, ghee – 2 tbsp, Chaat masala powder – 1/2 tsp, Dry mango powder – 1/4 tbsp, Salt – as required, Green chutney – 1 tsp, Coriander leaves – 1 tsp
Easy method of making Paneer Kulcha
To make Paneer Kulcha, first take out the flour in a big bowl and then add baking powder, baking soda, sugar, milk, curd to it and mix well and knead a smooth dough. Add 2 spoons of oil to the flour and knead it in a slightly wet bowl. Cover with a cloth and keep aside for an hour. Now heat oil in a pan and add mustard seeds and cumin seeds and fry it lightly, after which add onion, tomato, salt, ginger, green chilli, capsicum, black pepper powder. Add and fry for a few minutes and now add grated cheese to it, add some chaat masala powder and dry mango powder to it, mix it well and then add tomato ketchup, chopped coriander and salt.

Now take a ball of dough, shape it into a thick roti, take one tablespoon of cheese mixture in it and place it in the centre. Cook it on medium flame till it becomes golden and crisp from both the sides and then cut it and serve hot with ketchup or green chutney.
